A corn whiskey distilled by MGP and bottled by Dancing Goat, this sees 8 years of traditional maturation in new American oak before a Spanish Oak finish. It's bottled at barrel proof, and represents a new facet of the brand's mission statement to consider unique mashbills and finishes that aren't universally wine dominant. This is single barrel #3360, sold in the gift shop and parceled out as a single barrel selection, not yet claimed.
Bold maple syrup, apple bake, cinnamon, clove, ginger and a pleasant, cake batter doughiness.
Rich on the palate, loving the cola interplay of oak, sweet cream, ginger, apple crisp and toffee. Big baking spice on the back palate, this is just lovely.
Long finish. A touch fiery, you’ll feel the proof on this one a touch as it lingers off, but it’s complex, pleasant and the oak and ginger here are enough to make another sip a guarantee.
This is unusual in today’s whiskey releases, and perhaps folks should examine doing more with corn and thoughtful maturation. This spritely pour is unique, delicious as hell and full of unique whiskey character.
