    A straight bourbon whiskey finished on French Oak Staves, the Architect joins the growing line of products bottled under Penelope's various whiskey lines. It's bottled at a generous 52% ABV and features an interesting look at their continuation innovating on already competent blending skills. Let's dive in.

  • Nose:

    Beautifully sweet on the nose, there's a good deal of pancake syrup, warm icing, sweet cream and a light undertone of cinnamon, french toast sticks and light spice. It's a sweet nose, but an inviting one with plenty of character to entice.

  • Taste:

    Medium mouthfeel on the palate. The ABV is well received here, with a silky, smooth texture on the palate as the dessert notes roll in. Pancake syrup once again, a hit of spice, vanilla bean, maple candies, light cinnamon and a warming, toasted pecan note on the back palate.

  • Finish:

    Long finish, complex and a great balance of sweet and spice.

  • Overall:

    This toasted oak release helps blend some spice and complexity atop the standard Penelope profile and it just *works*. Delicious, fans of sweets and spicy whiskey alike will be right at home with The Architect.
