Excerpt: It could use more oak and complexity in its flavor profile, but as an early example of Pinhook and Castle & Key’s distilling prowess, it performs admirably.

House Review
Intro:
One of the first products rolling out from an entirely Castle & Key operation, Pinhook Rye'd On is a 2 year rye that was distilled, aged and bottled at Castle & Key. This has been a fun progression to watch and I'm looking forward to seeing how they continue to progress. Let's dive in.
Nose:
Sweet cream, nice oak and clove note. Honey, tobacco, pepper, rising bread, bubblegum and musty grains.
Taste:
Thin mouth feel, but heat in check. Young, that much is clear but it’s not offensive. Honey, clove, mango, melon, apple and pear. Musty grains, some pepper. It’s young but not distasteful. It’s not great, but it’s not bad.
Finish:
Short, quite hot on the finish. Some apple, young wood, pepper, toffee.
Overall:
Nose is excellent, palate is alright but the finish is what really gives away the youth. This is making excellent aging progress but it’s not there yet. Let’s check back again next year.
