Pursuit Spirits Oak Collection features a blend of whiskey from Tennessee, Indiana and New York that's blended and then finished with Innerstave cubes of Toasted American Oak and French Oak.
Sweet and buttery, this bourbon release is full of spicy pepper, toasted marshmallows, mellow brown butter and plenty of toffee.
Sweet and pleasant on the palate, it's a bit thin and meek, but plenty of dessert character reigns here. Toffee, more brown butter, sweet cream and a touch of pepper.
Medium finish, a touch of oak and maple syrup blends with toasted marshmallow, praline, brown butter once again and a touch of cream.
Overall, this release is entirely pleasant. It's sweet, easy drinking. Mellow, easy to pour for sure. Overall, I think the heavy finishing with Toasted Oak and French Oak sort of masks some of what makes the original Pursuit Bourbon unique: bold flavors, expert assembly and a beautiful, layered palate. That said, totally easy to enjoy, but if you're looking for the heights of Pursuit United's releases, you're going to want the OG Bourbon.
