  • Intro:

    Distilled by an unknown Kentucky Distillery and aged for 16 years before additional aging in French Oak, this is Nevallier - the newest whiskey in Rabbit Hole's annual Founder's Collection. These barrels come from founder Kaveh's private stocks, now sold to the distillery for use in their most premium bottling each year. With a beautiful, well engineered box, yet a price tag of $700, it's certainly not unreasonable to ask "has bourbon gone too far"? Well, has it? Let's dive in and find out.

  • Nose:

    Rich and layered, complex and powerful. Tons of sweet oak, bold musty tobacco, cherries and honey, praline and wonderful tannin. The richness is astounding, it reminds me of a George T Stagg that's given up some ethanol spike and instead traded it for more tobacco, a touch of root beer and a cherry upgrade.

  • Taste:

    Rich on the palate, viscous and chewy. Well proofed, the tannin is real but not overbearing. Rich with notes of sweet cream, bold oak, raisin bread and tobacco, chocolate cherries and dark chocolate cocoa. So much to work through, each note more enticing than the last.

  • Finish:

    Long finish that sticks around. It hangs around for ages. Rich with cherry cordials, cocoa and clover honey; sweet tannin and tobacco hang on and gently fade.

  • Overall:

    Overall, this whiskey is unreal. It's balanced, powerful and complex, and demonstrates both its age and the wonderful touch a French Oak finish can bring.
