  • Intro:

    Distilled by North Carolina's Southern Distilling Company, this is "Paragon" — a single-barrel wheated bourbon bottled at 50% ABV. Let's dive in!

  • Nose:

    Bold baking spice on the nose, combined with peanut brittle, peanut butter, toffee, honey and a fat stack of sweet tobacco.

  • Taste:

    Pleasant and sweet, packed with caramel, honey and tobacco. Pepper, peanut brittle. This is like Knob Creek Single Barrel with a few less years on it in profile, and it’s amazing how much oak and toffee there are for the wheated mashbill.

  • Finish:

    Big, woody finish that’s full of caramel, tobacco, peanut butter and butterscotch.

  • Overall:

    Overall, this single barrel is batting well for a relatively new operation (Southern Distilling was founded in 2013), and the proof helps tremendously. It’s like a younger Knob Creek Single Barrel, and that’s nothing but a compliment.
