  • Intro:

    Distilled by Starlight Distillery in Indiana, this straight bourbon whiskey is distilled in-house by Ted Huber and his two sons, and bottled on-premise. 4.5 years old and 50% ABV, this bottled in bond release was chosen specifically by Blake Huber and is generally available.

  • Nose:

    Cocoa, honey, caramel and rising bread. Sweet, inviting, light on oak but it's there.

  • Taste:

    Toffee on the palate, coffee and praline. Lovely and sweet. Theres a moderate viscosity to the palate, the proof is well placed, although it's very toffee forward. Not much else, though the coffee note is interesting and welcome.

  • Finish:

    Long finish with caramel and a prickle of ethanol. The heat here is noticeable, but not punishing, and the long, caramel forward character works well.

  • Overall:

    Not the most impressive profile, but it stays true to its profile in being sweet, exhibiting plenty of oak and a great toffee finish.
