Aged for 4 years at Starlight in Indiana, this bourbon is finished in a honey cask and bottled specially for Seelbach’s - a specialty retailer in DC. Bottled at cask strength, 53% ABV.
Sweet, enticing. Honey nut cheerios on the nose. Sweet confectioners sugar, butter pecan, butterscotch ice cream topping. All sweet, not cloying, but pretty clearly honey influenced.
Medium viscosity on the palate, loads of honey and toffee. Sweet, though a bit hot for 53% ABV - especially on the back of the throat. Honey, honey, honey. Some light oak, some rising bread.
Long finish, sweet and honey forward, loads of butterscotch candies, a light touch of oak and ethanol. The honey hangs for quite some time on the back of the throat.
This is pure honey, all day long. It’s sweet, while not cloying, it’s sweet. Very sweet and naturally honey forward. If you love honey, wish your bourbon drank a touch on the fiery side and was clearly honey heavy, this is for you. If you love bitter, bold, tannic drams, this is not for you.
