Distilled by Starlight Distillery in Indiana, this is their straight bourbon whiskey, distilled in house between the Ted and his two sons, and bottled on premise. 4 years old and 46% ABV, it checks a few asks from enthusiasts, so let's see how it fares.
Buttery baking spice, honey, clove and vanilla. Simple, sweet and approachable. No sign of youth on the nose, a touch of fruit like apple and pear, lightly yeast-y.
Thin palate, honey, almond, praline and baking spice. There's some youth here, a touch of grain and a spirit-y character, but it's minimal and hangs on for the back palate.
Short to medium finish, it's sweet and lightly nutty. Faint fruits, honey, a bit of oak and pepper. Better here, very solid.
Fun but not wildly novel. All in all, this is about as solid a craft bourbon as exists. Remarkable? Absolutely not. Palatable, versatile, and interesting enough for new drinkers or enthusiasts alike? Definitely.
