Distilled by a variety of producers in Indiana, Kentucky and Tennessee and bottled by Barrell Craft Spirits, Stellum is the inventive label under their brand that celebrates the changing of the seasons with this release. Said to contain some of their oldest stocks, Equinox is a bourbon whiskey bottled at barrel proof and released right at the $99 price point.
Fat with flavor and fatty to say the least, loaded with maple, nutty peanut brittle, maple and a boisterous oak character. Bold and overloaded with character.
Rich on the palate. A touch of ethanol pairs nicely with a silky, viscous mouthfeel. Toffee, pralines, honey, bold barrel char and a goliath spice note keep this pour interesting from beginning to end.
Long finish, rich with caramel, cocoa, fudge, more peanut brittle. I like how the oak is carrying with every layer, laying down plenty of tannin, complexity and spice.
This is nothing but a win in my book. It carries on the characteristics I love from Stellum Black Bourbon and keeps the complexity high and engaging through every sip. This is going to be great next to the fire as the temps at night begin to drop.
